土壤作物系统中的硒与人体健康

摘要:

硒是生命必需的微量元素,缺硒与硒过量都会对人体产生危害。系统综述了土壤中硒的来源、含量水平及赋存形态;作物对硒的吸收累积特征及富硒农产品的判别标准、外源补硒的技术方法;硒的缺乏与过量对人体健康的不利影响。围绕土壤作物系统硒的研究,就今后富硒农产品的开发提出了对策建议。

Abstract:

Selenium is an essential trace element in life. Both selenium deficiency and selenium excess are harmful to the human body. A systematic review is made of the source, content level, and occurrence form of selenium in the soil, the selenium absorption and accumulation characteristics of crops, the discrimination criteria for selenium-rich agricultural products, the technical methods of external selenium supplementation, and the adverse effects of selenium deficiency and excess on human health. Based on the study of selenium in soil crop systems, countermeasures and suggestions are proposed for the development of selenium-rich agricultural products in the future.
