硒是生命体必需的一种微量元素,其摄取量不足或过量均可能引起一系列的营养问题,甚至诱发疾病。生命体自身无法合成硒,只能通过“土壤-农作物-食物-生命体”过程获取。介绍了有益元素硒,综述了作物富硒的影响因素以及常见的作物富硒技术,并展望了硒营养的未来发展趋势。
Selenium is an essential trace element for living organisms, and the insufficient or excessive intake may cause a series of nutritional problems and even induce diseases. Living organisms are unable to synthesize selenium independently and can only obtain selenium through the process of "soil-crop-food-living organisms". The beneficial element selenium is introduced, the influencing factors of crop selenium enrichment and common crop selenium enrichment technologies are summarized, the future development trend of selenium nutrition is prospected.
